Filete de Cerdo
Pork Filet
500 gr. Pork filet
1 Red pepper, 1 green pepper
1 Baby onion
Laurel, rosemary
Salt, pepper
Paltita avocado oil
Place the sliced red, green peppers (with the seeds and veins removed) and the baby onion cut lengthwise in a pot of boiling water.
Add laurel, rosemary and salt.
Let the water boil until the peppers are very tender, allow them to cool down and cut them in long, thin slices; set aside.
Pour the avocado oil in a frying pan and heat to 240 ºC.
Sear the pork filet completely in the hot oil, add salt and pepper to taste.
Keep the pork in the pan for approximately 7 minutes and remove the pan from the burner.
Cut the filet in small medallions and place in a serving dish along with the peppers (which have been passed through the remaining oil in the pan).
Serve and enjoy!
